Palada Pradhaman Recipe with Bambino Rice Ada

Palada Pradhaman is Kerala’s authentic delicious payasam or kheer recipe which is made using rice ada and milk.

It is famously served during festivals, especially Onam. An Onam Sadya can never be complete without this rich delicious Palada Pradhaman recipe. Rice Ada is a rice-based mini dried papad that is used in Kerala for making Pradhaman. The authentic Palada Pradhaman recipe usually appears slightly pink in colour, slow cooked milk for hours induces the colour. Follow this simple Pradhaman Palada recipe and satisfy your family’s cravings.

Ingredients

  • 1 cup Bambino Rice Ada
  • 2 litre full cream milk
  • 3/4 cup Sugar
  • 1 tablespoon Ghee
  • 1/2 teaspoon Cardamom Powder (Elaichi)

Method:

  • To begin making the Kerala Palada Pradhaman recipe, first slow boil milk and 1/2 cup sugar on low flame until it reduces lesser than half the quantity.
  • Cook Bambino Rice Ada as per packet instructions. Once cooked, drain the ada and rinse it in cold water
  • Heat ghee in a pan
  •  Add 1/4 cup sugar and saute. Wait till the sugar melts and starts to turn slightly brown. Add cooked Bambino Rice Ada and saute for about 2 minutes.
  • Add about 1 to 1-1/2 cup boiled milk. Mix well. If it needs more milk add it.
