  • Optional: ½ tsp urad dal + ½ tsp chana dal
  • A few peanuts or cashews (optional)
  • 1 medium onion, finely chopped
  • 1–2 green chillies, chopped
  • Optional veggies: carrots, beans, peas, capsicum
  • Curry leaves (optional)
  • Coriander leaves for garnish
  • Optional: a squeeze of lemon juice

Method:

  • Bring 3 cups of water to a boil.
  • Add a pinch of salt and a little oil.
  • Add the Ragi Vermicelli and cook until soft.
  • Drain the water completely and rinse the cooked vermicelli under cold water to prevent over-cooking, and set aside.
  • Heat oil in a pan, add mustard seeds and allow them to splutter, followed by jeera, urad dal, chana dal, cashews/peanuts.
  • Sauté until they turn golden.
  • Add chopped onions, green chillies, and curry leaves. Sauté until onions turn soft.
  • Add mixed vegetables of choice and cook until they turn slightly tender.
  • Add the drained Ragi Vermicelli to the pan.
  • Mix gently to avoid breaking the strands. Cook on low heat for 2–3 minutes so flavours blend well.
  • Adjust salt if needed.
  • Garnish with fresh coriander leaves.
  • Add lemon juice if you prefer a tangy finish.
