Warm, rich and loaded with the aroma of roasted wheat and ghee, atta halwa, also known as aate ka sheera, is a classic Indian sweet that needs only a handful of ingredients.
Using Bambino Fortified Atta, this recipe gives you a smooth, glossy halwa in around 15 minutes.

- 1 cup ghee
- 1 cup sugar
- 2 cups water
- ½ tsp cardamom powder
- 1 tbsp chopped almonds

Getting the Atta-Ghee-Sugar Ratio Right
The ratio changes the final texture considerably.
1:1:1 - Atta : Ghee : Sugar gives you a richer, denser and more indulgent halwa.
For a softer, more spoonable festive halwa, increase the liquid rather than simply adding more sugar. A 1:1:1 ratio of atta, ghee and sugar with roughly 2 parts water works well for a smooth consistency.
The Most Important Step: Roasting
Don't rush the atta.
Under-roasted flour can leave the halwa tasting raw and pasty. Roast it slowly until the colour deepens and you get a distinctly nutty aroma before adding the liquid.
Festive Variation
For Navratri or Diwali, garnish generously with dry fruits and a few strands of saffron soaked in warm water.
For a Kada Prasad-style preparation, the proportions and preparation can be adapted accordingly.
