Ingredients:
1 cup Bambino Atta
1/2 cup sesame seeds (til)
1 cup jaggery (gud), grated
1/4 cup cashew nuts
1/4 cup ghee
1/4 cup water
1/4 teaspoon cardamom powder
Nuts for garnish (optional)
Method
Heat a pan on medium flame and dry roast the sesame seeds until they turn golden brown and start to crackle. Set aside
In the same pan, add ghee followed by the Bambino Atta, and roast it on low flame until it turns golden brown and emits a pleasant aroma. This should take about 10-15 minutes
In a separate pan, add water and grated jaggery. Heat it on medium flame until the jaggery completely dissolves and forms a syrup. To check the consistency, take a drop of the syrup and drop it into a bowl of water. If it forms a soft ball, it's ready
Add the roasted sesame seeds and cardamom powder to the roasted Bambino Atta. Mix well
Slowly pour the jaggery syrup into the atta mixture, stirring continuously to avoid any lumps. Mix until everything is well combined
Grease a tray with ghee and pour the mixture into it. Spread it evenly using a spatula
Garnish with chopped nuts if desired. Let it cool down to room temperature, then refrigerate for about an hour to set
Once set, cut the Til Gud Atta Burfi into desired shapes. Enjoy your homemade Til ki burfi with jaggery with family and friends!
