Ingredients:

  • 250g Bambino Pasta of choice (penne, macaroni, spaghetti or fusilli)
  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts or pistachios (toasted)
  • 2 garlic cloves
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Chilli flakes and oregano (optional seasoning) 
Method:
  • Boil a pot of water with salt and add in the Bambino pasta, cook according to the package instructions until al-dente
  • For the pesto sauce, take a grinder and add in  the basil leaves, parmesan cheese, pine nuts or pistachios, garlic cloves and olive oil. Blend until smooth and creamy, then season with salt and pepper
  • Take a pan and on low flame combine the Bambino pasta with the pesto sauce and give it a good mix. If the pasta seems dry add in a little of the pasta water used to boil
  • You can customise this pesto pasta recipe by adding in your favourite vegetables or meat
  • Season the pesto pasta with oregano and chilli flakes, serve hot
