Made with Bambino macaroni pasta, fresh veggies, and aromatic spices, this recipe delivers a fusion of Indian and Italian flavours in every bite. Methods

Ingredients:

  • 200g Bambino Macaroni Pasta
  • 1/2 cup sweet corn (optional)
  • 2 tablespoons oil or butter
  • 1 green chili, finely chopped
  • 1 tablespoon garlic, finely minced
  • 1 medium onion, finely chopped
  • 1/2 cup capsicum diced
  • 1/2 cup carrots, diced
  • Veggies of choice (optional)
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon pasta masala
  • Salt, to taste
  • 2 tablespoons pasta sauce
  • 1 tablespoon tomato ketchup
  • 1 teaspoon oregano (optional)
  • 1/4 cup grated cheese

Method:

  • Bring a vessel of salted water to a boil. Add macaroni pasta and sweet corn, and cook for 8–10 minutes or until tender. Drain and set aside.
  • Heat oil or butter in a large pan over medium heat. Add green chili and minced garlic, and sauté until fragrant.
  • Add chopped onions, capsicum, and carrots. Cook for 3–4 minutes until slightly softened. (Note: At this stage, you can also add in any other veggies of choice) 
  • Stir in pasta masala and salt. Add the chopped tomatoes, cover the pan, and cook for 2 minutes until the tomatoes become soft and mushy.
  • Add pasta sauce and tomato ketchup. Mix well and cook for another 1–2 minutes, allowing the flavours to combine.
  • Add the cooked Bambino Macaroni Pasta and sweet corn to the pan. Toss everything together until the pasta is well-coated with the flavourful masala sauce.
  • Sprinkle grated cheese over the top and let it melt. Garnish with oregano for a final touch.
  • Serve hot
