Ingredients
- 2 cups Bambino Vermicelli
- 1 tbsp vegetable oil
- 1 onion
- ¼ tsp jeera
- ¼ tsp mustard seeds
- 25g groundnuts
- ½ tsp chana dal
- ½ tsp urad dal
- 1 red chili
- A few curry leaves
- ½ tsp turmeric powder
- 2 green chilies
- A handful of coriander leaves
- Salt to taste
Method:
- To begin this semiya upma recipe, heat a heavy kadai or pan, and begin to roast the Bambino vermicelli, stirring often. Remove the roasted vermicelli to a separate bowl or plate. Keep aside
- Add 2 tablespoons of oil or ghee and 1/2 spoon of mustard seeds, cumin seeds, and urad dal to the hot oil. Add cashews and peanuts if you like
- Add ⅓ cup finely chopped onions, ginger, green chili, 7 to 8 curry leaves, 1 dry red chili, and a pinch of asafoetida (hing) and mix well
- Once golden brown, add 2 cups of water to the mix. Add salt, and sugar to taste. Let the water come to a boil, and add the roasted Bambino vermicelli to the mix
- Simmer until water is absorbed and vermicelli has become soft
- Garnish with coriander leaves and serve hot
