2 cups Bambino Vermicelli
1 tbsp vegetable oil
1 onion
¼ tsp jeera
¼ tsp mustard seeds
25g groundnuts
½ tsp chana dal
½ tsp urad dal
1 red chili
A few curry leaves
½ tsp turmeric powder
2 green chilies
A handful of coriander leaves
Salt to taste
Method:
To begin this semiya upma recipe, heat a heavy kadai or pan, and begin to roast the Bambino vermicelli, stirring often. Remove the roasted vermicelli to a separate bowl or plate. Keep aside
Add 2 tablespoons of oil or ghee and 1/2 spoon of mustard seeds, cumin seeds, and urad dal to the hot oil. Add cashews and peanuts if you like
Add ⅓ cup finely chopped onions, ginger, green chili, 7 to 8 curry leaves, 1 dry red chili, and a pinch of asafoetida (hing) and mix well
Once golden brown, add 2 cups of water to the mix. Add salt, and sugar to taste. Let the water come to a boil, and add the roasted Bambino vermicelli to the mix
Simmer until water is absorbed and vermicelli has become soft
Garnish with coriander leaves and serve hot
