Bambino Vermicelli Upma

Ingredients

  • 2 cups Bambino Vermicelli
  • 1 tbsp vegetable oil
  • 1 onion
  • ¼ tsp jeera
  • ¼ tsp mustard seeds
  • 25g groundnuts
  • ½ tsp chana dal
  • ½ tsp urad dal
  • 1 red chili
  • A few curry leaves
  • ½ tsp turmeric powder
  • 2 green chilies
  • A handful of coriander leaves
  • Salt to taste

Method:

  1. To begin this semiya upma recipe, heat a heavy kadai or pan, and begin to roast the Bambino vermicelli, stirring often. Remove the roasted vermicelli to a separate bowl or plate. Keep aside.
  2. Add 2 tablespoons of oil or ghee and 1/2 spoon of mustard seeds, cumin seeds, and urad dal to the hot oil. Add cashews and peanuts if you like.
  3. Add ⅓ cup finely chopped onions, ginger, green chili, 7 to 8 curry leaves, 1 dry red chili, and a pinch of asafoetida (hing) and mix well.
  4. Once golden brown, add 2 cups of water to the mix. Add salt, and sugar to taste. Let the water come to a boil, and add the roasted Bambino vermicelli to the mix.
  5. Simmer until water is absorbed and vermicelli has become soft. 
  6. Garnish with coriander leaves and serve hot.
