**Ingredients:**

-   1 medium onion, thinly sliced
-   1 medium carrot, julienned

-   2 tablespoons soy sauce
-   1 tablespoon chilli sauce
-   1 tablespoon vinegar
-   1 teaspoon black pepper
-   Salt to taste
-   2 spring onions, chopped

  
**Method**

-   Boil water in a round bottomed vessel and add a pinch of salt
-   Add the Bambino long cut vermicelli to the boiling water and cook according to the package instructions, usually about 3-4 minutes
-   Drain the vermicelli and rinse under cold water to stop the cooking process. Set aside
-   Heat vegetable oil in a large wok or frying pan over medium-high heat and add minced garlic and ginger, sauté for about 1 minute until fragrant
-   Add the sliced onion and cook until it becomes translucent
-   Add the julienned carrot, cabbage, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
